Homemade Chicken Tenders

This is my first attempt at making homemade chicken tenders. I found a recipe three years ago from Shape magazine.  I rip out interesting pages from my magazine collection and file just in case I want to try it or need it for something else.  I am SOOOOOO glad I snatched this recipe!  The tenders were great.  My mom even liked them and she is NOT an advocate for going the healthy route on her fave fried foods. 


I adjusted the recipe slightly from the Shape one.  I will put in parenthesis what Shape suggests. I am on Instagram - organicssense.  Check out my picture - I don't know how to save the Instagram pictures to my phone.  What I wouldn't give to have a geek squad employee as my bestie! LOL!!!




CHICKEN FINGERS WITH MUSTARD DIPPING SAUCE
Shape magazine February 2011


Chicken Fingers recipe


8 tenders
1 tblspn Dijon mustard
2 tblspn safflower mayo (light mayo)
1/4 tspn garlic powder
1 1/2 tspn grapeseed oil (canola oil)
1 cup whole wheat panko (1/2 cup panko)
1/4 cup almonds (walnuts)
2 tblspn almond meal (wheat germ)
2 tblspn pecorino (parmesan)
1/4 tspn sea salt (kosher salt)
1/4 tspn fresh ground pepper
**cooking spray is suggested by Shape but I did not use


Dipping Sauce recipe
3 tblspn safflower mayo (light mayo)
2 tblspn mustard (grainy mustard)
2 tblspn raw honey (honey)
1 tblspn Dijon mustard
1 tspn fresh lemon juice
salt and pepper to taste
***I added poppy seeds and a little apple cider vinegar


Preheat oven to 425F.
Combine mustard, mayo and garlic powder in shallow dish.
Add tenders and coat well. 
Set aside.
***I put in fridge to get cold.  Mixture stayed better and wasn't as messy to roll in "crunch" mixture.


Pour oil in skillet (I use iron skillet but Shape suggested nonstick skillet) and heat over medium.
Add panko and toast for 3-4 minutes, stirring often, until crumbs are golden.
Transfer to different shallow dish than mayo mixture.


Chop almonds (Shape suggested toasting walnuts and then chopping.  I didn't do this)
Add panko, almond meal, pecorino, salt and pepper.
Toss well.


Set wire rack over large baking sheet.
Spray lightly with cooking spray (I didn't use cooking spray)
Dredge chicken in crunch mixture and arrange on rack.
Spray chicken lightly with cooking spray (I didn't do this)
Bake for 12 minutes or until cooked thoroughly.
****After 12 minutes, I broiled on high for 1 minute on each side of tender to give it an extra crunch.


While chicken is baking, combine dipping sauce ingredients in bowl.

Parmesan Zucchini Noodles with Blackened Salmon

Wow!  It's been over 6 months since I've posted.  There is no excuse...I've been lazy.  Nothing major going on in my life but trying to enjoy life with friends and family.  Had to get my order of importance back in line - God, Myself, then Family.  Crazy how easy it is to get thrown off track. 


Well...I have made yet another resolution to eat better and to be debt free in 2014.  I know that I can do it through prayer and faith.  This year, I want to try new recipes at least once a week to bring a better variety into my eating regimen.  I am getting a little tired of the same old - same old.  Here is a recipe that I tried yesterday.  I don't use measurements so the ones below are an estimate.  And shout out to Inspiralized.com for putting me on to the great Paderno Spiralizer!!!!!


Parmesan Zucchini Noodles with Blackened Salmon


Wild Salmon fillet  (Aldi's Wild Salmon $4.49/bag for 4 fillets)
Blackened seasoning (Buy bulk and mix yourself - saves $$$$$)
Medium Zucchini (Hoover's Market $2.99/lb) *
2 Tblspns Pecorino Parmesan (Costco bulk because I use this A LOT!)
1 Tblspn Grape Seed Oil (Hoover's Market $9.99 on sale)
2 Tblspn Dried Basil (Bulk for best deal!)
Thick slice of Onion chopped (Fresh Market $1.69/lb)
2 Cloves of Garlic chopped (Aldi's bag of 3 $0.99)
Red Pepper Flakes to spice preference (Bulk for best deal)
6 Pitted Black Olives chopped (Costco Bulk because I eat a lot of these!)
1 Tblspn Olive Oil (Hoover's Market $9.99 on sale)
Ground pepper and salt to taste
* stands for organic




Put a few drops of grape seed oil in iron skillet.  Cover salmon in blackened season and place in iron skillet.  Bake on 425 until finished - about 10 minutes.


Spiralize Zucchini.  Inspiralized.com has a tutorial for you first-timers!  I cut my noodles into long strips instead of using one long strip.  It makes it easier for me to toss and eat.


Put grape seed oil, onions, garlic and red pepper flakes in a wok.  Heat until onions are translucent.  Stir in Zucchini noodles until tenderness. Remove from heat.


Chop up Salmon. Add salmon, olives and Zucchini mixture in a large bowl and toss.  Add pecorino, olive oil, basil and toss.  Salt and pepper to taste.


Voila!!!

Oatmeal Is Not Just For Eating!

I found a great article about oatmeal on iVillage today.  There were numerous uses that oatmeal has other than eating.  I am very interested in healing my skin and health issues with the things God placed here on Earth.  I believe that if our body can be healed with natural products, then it is more beneficial than synthetic materials and chemicals. 

Please read the article in the link below and let me know if you try any of the remedies.  I am going to try all of them.  I must let you know, natural remedies don't work as fast as the "quick" fixes you can buy.  With my experience, natural remedies heal the problem and do not build a dependency as most "quick" fixes have done for myself.  I remember being a slave to acne washes for my skin issues.  When I would attempt to wean myself from the chemicals, my acne would return with a vengeance!  I did not heal my acne until I focused on a full body cleanse, colonic and clean eating regimen.
