Beets are rich in sooooo many vitamins - folate, vitamin C and niacin. A great article in the August 2012 Shape magazine issue educated me about this lovely red root.
The article listed tips from chef Hadley Schmitt. Beets with bright green leaves should still be attached when selecting. Beets should be firm and shouldn't have blemishes. Beets should be dry and covered to last longer in the fridge.
